Yogurt Pancakes and Granola Topping

Ingredients

  • 1 cup of all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking power
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1/2 cup low-fat plain yogurt
  • 1 egg, lightly beaten
  • 3 tbsp vegetable oil
  • 1/2 cup Sweet Home Farm Honey Nut Granola

Garnish

  • 1 cup fresh raspberries, blueberries, or blackberries
  • 1/2 cup low-fat plain or vanilla yogurt
  • 1/2 cup Sweet Home Farm Honey Nut Granola
  • 1/4 cup maple syrup or honey

Directions

  1. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk milk, yogurt, egg, and one tbsp of vegetable oil.
  3. Stir liquid mixture into the flour mixture until just combined. Fold in granola.
  4. Lightly brush large nonstick skillet with some of the remaining oil. Heat over medium heat.
  5. Using scant 1/4 cup of batter per pancake, pour four pancakes into skillet.
  6. Cook for about 2 minutes or until bubbles appear on the top the bottom is golden brown.
  7. Flip and cook for about 1 minute or until bottom is golden brown.
  8. Repeat with the remaining batter and oil.

To Serve: Garnish pancakes with berries, yogurt, granola, and maple syrup.
